Danny’s Onion Banjo’s!
3 Medium sized onions
Gram Flour (Chick Pea Flour)
Red Chilli Powder
Finely chop onions into thin rings
Add to bowl
Add 2 tea spoons of salt
1 tea spoon of chilli powder
2 tea spoons of Garam Masala
1 tea spoon of ground coriander powder
1 small tea spoon of turmeric powder
Add a small amount of coriander seeds-not too many okay!
Mix generously without damaging the onions
Cover bowl with cling film and place in the fridge until onions have sweated out completely, usually 20 mins.
Once they onions have sweated out, remove from fridge, give them a mix so all the spices are well mixed in, and sieve in the gram flour (add larger for a better batter) and mix until there is a loose-medium thick batter but not too watery.
Pick up in small uneven grabs using just three fingers! Add to hot oil and cook until brown-keep turning or they will only cook on one side! Can be shallow pan fried or baked in the oven also!
Mint Sauce Dip
Take 4 teaspoons of natural yoghurt
Mix in 3 teaspoons of fresh garden mint or mint sauce
Add salt to taste.
